Plant-Based Eating Made Simple

Hiiiii lovelies!

How is your year going so far? I dont know if you saw on my instagram but hubby and I are moving to STOCKHOLM next month, woooo! So crazy! Head over to my instagram to read more about it and follow our journey overseas!

As part of the move, we renovated our house in order to sell it so things have been a bit chaotic here since January. I havent been into cooking that much as we simply havent had time, and things have just been so off schedule, people in and out of here, etc etc.

Do you remember the box I got back in January with all the goodies? Well guess what, I got another one! And this one is all focused on simple nutrition for National Nutrition Month! It also all happens to be vegan, which I'm so excited about! I love finding new vegan items that makes it easier to live a plant-based lifestyle - especially when life gets this crazy. So, I figured I'd give you a roundup of the products and hopefully they can help you too when life gets busy, whether you're vegan or not.

One of my favorite things to make on busy weeknights is rice, veggies and either avocado or tofu. Its fast, yummy and nutritious but it can be a bit bland on its own. Enter Coconut Aminos! Its a delicious and savory soy sauce alternative with 72% (!) less sodium compared to the leading soy sauce brand! Its made from hand-harvested, naturally fermented coconut blossom sap thats blended with sea salt. Its perfect for stir-fries, marinades or just on rice and veggies! Its soy-free, gluten-free, Whole30 approved and NO added sugar!

Who else loves hazelnut spread?? I can literally eat the whole dang jar! So imagine my excitement when I found this organic AND vegan Nutella in the box! Its from Nutiva, and is absolutely delicious, AND it contains 40% less sugar than the leading brand! Its my new go to for when we watch Netflix in the evenings, I just eat it straight out of the jar... #NoShame (and it's part of my stress relief if im completely honest).

I've also seen some really yummy looking crepe recipes too that I want to try it with once we get settled over in Sweden!

You can find more info about this jar of yumminess here, along with fun recipes: Nutiva Hazelnut Spread

After I went plant based last year, I eat a lot of rice - probably 5 days a week. I absolutely love it! The only downside is how long it takes to cook. If I dont meal prep or remember to make it the night before, I usually skip it just because its such a hassle. A great solution to this is Minute Rice Rice Cups! These nifty little things cook in ONE MINUTE in the microwave! How convenient is that? Perfect if you're running out the door or dont have time to cook. The other day I forgot to make my husband rice for his lunch and I realized just as he was walking out the door - Minute Rice to the rescue! He just brought one to work = crisis averted :)

And did you know that Minute Rice has been around since the '40s?? And how can it be so fast you ask? Dont worry, there is no weird processing or bad chemicals. Just quality rice, simply cooked then dried! Nothing added but convenience. Minute Rice products are available at major retailers, such as Walmart and Target, as well as popular grocery stores across the US, such as Kroger, Publix and more.

For tons of fun and easy recipes, check out the Minute Rice website!

Another one of my favorites for busy days is buddha bowls! I love them because you can basically just throw any veggies together, add some rice or quinoa (or other grain), and voila! You have a super yummy lunch packed with nutrients. Usually I dont put much on it which again can make it quite bland, but I tried the Mighty Sesame Harissa Tahini and its is DELICIOUS! It contains a blend of natural harissa spices for an aromatic, roasted-chile pepper flavor profile with a kick (but its not too spicy). It comes in a convent squeeze bottle which makes it very easy to use; no jars, no stirring, no mess!

Mighty Sesame Harissa Tahini is packed with 7g of protein and contains 260mg of calcium per serving. It's vegan, gluten- and dairy-free, kosher, and halal. And super nutritious - its rich in Calcium, Iron, Copper, Manganese, Phosphorus, Thiamine, Protein, Magnesium, Potassium, Selenium, Fiber, Tryptophan, Riboflavin, Niacin, Pantothenic Acid, Vitamin B6, Folic Acid, Omega 3 & Omega 6!

Check out Mighty Sesame for recipes and more info about the benefits of sesame seeds!

One of my favorite snacks after a hardcore handstand session or while on the road are almonds! They're my favorite nuts and I never leave the house without a little container or ziplock bag filled with them. However, sometimes they can be a bit bland (lol do you notice the theme in what I eat) and I found a new favorite - infused almonds from RECIPE 33! They come in five flavors: Lemon Rosemary (pictured), Cinnamon Vanilla, Garlic Dill, Smoky Serrano, and Black Truffle! They're infused so there is no mess and no oils all over your hands. RECIPE 33 developed a proprietary small batch process to take real ingredients and infuse flavor into each almond without the addition of any artificial additives or flavors.

Check them out below and save $2 on any 4oz bag with code: TryRECIPE33

I hope you love these products as much as I do, and that they can help you eat good, nutritious food even when life gets a little crazy :)

Much love,

Elina
