Loaded Avocado Toasts with Fresh Dill & Super Seeds from Purple Carrot





Avocado toast has been one of my staple breakfasts since going plant-based, its just SO good! I switch between avocado toast and oatmeal basically - so I was very excited when I found this spiced up version from Purple Carrot (who by the way have some AMAZING recipes - and they helped me through my first 3 months as a vegan!)


Ingredients:

  • 4 slices sourdough bread

  • 2 avocados

  • ¼ oz fresh dill

  • 1 lemon

  • 2 tbsp hemp seeds

  • ¼ cup pumpkin seeds

  • 4 tsp olive oil

  • Salt


INSTRUCTIONS

1. Prepare the toast Toast the sourdough bread. Halve the avocados and remove the pits. Pick dill fronds from the stems. Halve the lemon. TIPS: Use half an avocado for each piece of toast. Dill fronds are the wispy leaves on the thick stems. 2. Serve Scoop out the avocado flesh, spread it on the sourdough toast, and add a pinch of salt. Squeeze lemon juice on the avocado. Top with dill fronds, hemp seeds, and pumpkin seeds. Drizzle each loaded avocado toast with 1 tsp olive oil.
