I've been on a sandwich obsession lately, they're just so easy and filling! Especially on these warm summer days when you just want something quick and simple. These plant based Figgy Grilled Cheese Sandwiches from Purple Carrot are a new favorite here in our house, and they have just the right amount of savory and sweet! My husband isnt plant based so he tends to just add some grilled chicken on the side.

MAIN INGREDIENTS
1 pear
2 oz TreelineĀ® Soft French-Style Cashew Cheese
4 slices sourdough bread
2 tbsp fig spread
2 tbsp vegan butter
INSTRUCTIONS
1. Build the sandwiches Thinly slice the pear. To assemble the sandwiches, spread cashew cheese on one slice of sourdough bread and add a few pear slices. Smear fig spread on another slice of bread, and place face-down to close the sandwich. Repeat to make the second sandwich.
2. Grill the sandwiches Heat the butter in a large nonstick skillet over medium-high heat. Once butter is melted, add sandwiches and cook until browned and crispy, 2 to 3 minutes per side. Halve the figgy grilled cheese sandwiches and serve with any remaining pear slices.
