Its in the middle of winter here in Stockholm Sweden right now which means its cold and really dark. I'm mostly spending time at home reading, writing, filming, or doing yoga. I prefer slower yoga during this time of year, its like my whole being goes into hibernation! Slow, long holds and lots of meditation is what my yoga practice consists of at the moment. Since its so cold I'm also craving warm, hearty meals that are easy to make - because I dont have a lot of motivation to cook when its pitch black outside. So naturally I'm doing a lot of slow cooker meals! What is easier than the slow cooker? Nothing! Here is a roundup of some of my favorite slow cooker recipes, perfect for this cold weather! Most of these are vegan and I included a couple vegetarian options as well (you can always make them vegan by exchanging the ingredients for vegan alternatives).

I absolutely LOVE oatmeal and this is a such a fun and simple way of making it for the whole week! Slow cooker for the win yet again! This is used with steel cut oats too which makes it so hearty - I never use steel cut oats even though they're my favorite - its too much of a hassle to make everyday as they take longer to cook. But since we're using the slow cooker here its perfect! Add some oat milk, walnuts, and cinnamon on top when serving, yum!
7. Vegetarian Slow Cooker Quinoa Pilaf with Wild Rice [GLUTEN FREE]
Another one of my favorites is wild rice, its just so much more flavorful than regular rice and I love the texture. Did you know its also high in protein and full of nutrients, e.g. folate?? The quinoa adds lots of protein and even more nutritious goodness, and this pilaf is a flavor explosion in your mouth! Its also completely gluten free! You can make this vegan by using a plan based Feta cheese and opting for a veggie based broth.
8. Vegan Crockpot Broccoli Turmeric Soup [GLUTEN FREE]
This yummy soup is perfect for this cold weather! And an extra bonus for us with autoimmune diseases such as Ankylosing Spondylitis: it contains turmeric which has been proven to help decrease inflammation! So sip away! Its vegetarian but you easily make it vegan by using vegan butter instead of regular. Its also gluten free.
9. Vegan Slow Cooker Red Lentil Curry with Sweet Potatoes [GLUTEN FREE]
This vegan curry is warming, delicious and nutritious! Its a plant based powerhouse AND its inexpensive to make which is a great thing right now (hello inflation). Its vegan, gluten free, dairy free, and nut free, so suitable for many types of dietary preferences! Also, red lentils are high in protein!
10. Vegan CrockPot Carrot Parsnip Mash [GLUTEN FREE, PALEO]
I feel like the parsnip is such an underrated vegetable, isnt it? Its delicious but I personally dont use it as much as I'd like to, I tend to just forget about it. Parsnips are rich in folate, vitamin K, potassium and other important nutrients. Its also full of fiber, so I'm excited to add this yummy recipe into our rotation.
11. Vegetarian Slow Cooker Spinach and Mozzarella Frittata
You cant ever go wrong with a frittata, right? There is something so comforting about them, they feel so filling and substantial! This one is packed with spinach which is a nutritional powerhouse full of vitamins, minerals and even protein!
